India is the largest producer of fenugreek in the world


Origin

Fenugreek is a native of South Eastern Europe and West Asia, now cultivated in India, Argentina, Egypt and Mediterranean countries (Southern France, Morocco and Lebanon).

In India it is grown extensively in Rajasthan, Gujarat, Madhya Pradesh, Uttar Pradesh, Maharashtra and Punjab.

It is a cold season crop and is fairly tolerant to frost and very low temperature. It is best suited


About

Fenugreek is small stony seed from the pod of a bean-like plant.

These seeds are hard, yellowish brown and angular.

Some are oblong, some rhombic, other virtually cubic.

They are available whole and dried, or as a dull yellow powder ground from the roasted seeds as dry roasting enhance the flavor and reduces the bitterness


Varieties

Powerful, aromatic and bittersweet like burnt sugar.


Usage

Fenugreek is an ancient spice and is mostly used in Middle East, Northern- Eastern Africa and India, especially for pickles.

In India, its fresh leaves are eaten as a tasty vegetable, which is prepared like spinach. Fenugreek is exported in whole & powder form.

Fenugreek Seeds also has themedicinal properties.

Fenugreek may help regulate cholesterol levels and improve blood pressure, which can reduce the risk of developing heart conditions and improve heart health.

This may be because fenugreek seeds contain roughly 48 percent dietary fiber.

Based on the available evidence, fenugreek has benefits for boosting testosterone, and increasing milk production in people who are breastfeeding.

Fenugreek may also reduce cholesterol levels, lower inflammation, and help with appetite control, but more research is needed in these areas.

Fenugreek is used for kidney ailments, a vitamin deficiency disease called beriberi, mouth ulcers, boils, bronchitis, infection of the tissues beneath the surface of the skin (cellulitis), tuberculosis, chronic coughs, chapped lips, baldness, cancer, Parkinson’s disease, and exercise performance.
